My fucking eyelashes hurt.

Good lord. After that crazy drive back through a blizzard, I had to blow to driveway. Well, it blew back. I went ass over tea kettle and landed on my left hip. The bad one. And somehow twisted my wrist. I guess we had ice under the snow.

Lol

Boy that stung on Monday and made my knee act up today. My labia are extra sensitive today.

Got an 80% hydration sourdough working. It is not forming gluten like I want. I think I should have done more salt. I shot for 2% but maybe I fucked up.

I just keep adding flour and salt. I've never seen anything like this. I've added >20% more flour. There is no way this is above 70%  but it's just sopping wet and sticky

Dude!  How can you process gluten?

I have no markers for it and while it's hard to believe,  I eat so healthy and have had healthy gut flora until the diverticulitis and now SIBO like infection.

I also have been eating home made bread and making my own bread for >90% of the bread I eat. If the bread is fermented enough it should have a net effect of lowering inflammation and starving the overgrowth in my gut.

Bread is vegan yogurt. If you never develop an allergy and dont have the genetic markers your good.

Home made bread inside my large batch bread pudding saved my life. Saved >10 poundsof muscle when I was almost starving I bet.

My boss is allergic to yeast, not sourdough however, nor brewers yeast.

Not that this is relevant here.

Jealous of the breadmaking.  I have to get off my ass and do it.

Sounds like he's spending too much time in a very nappy dugout.

So specific, but makes sense, the yeast we normally use is modified heavily.

This batch may be a waste. I'm thinking about pouring the foamy mass onto a hot stone and baking like that.

Something yummy will happen. Lol

I used stone ground instead of finely ground whole wheat. I didnt notice when adding!

Holy fuck. My house smells like sweetened bourbon. I am saving a loaf just to bake when the W gets home.

Dense AF, but I still got crumb because ~85% hydration. Had to pour the dough into the banaton basically. no amount of slap and fold could help. Hahahaha. I basically made oatmeal loaf without the help of gelling the starches first.  God bless overnight fermentation and long autolyse.

And now I k ow that even when you do everything wrong and with the most offensive ratios you can still get good bread.

I can now retire.

All I have left is croissant with sourdough starter and fermented home cured and churned butter.

That is my destiny.

Or pick your laminated leavened pastry.

:D

I wouldn’t think cost-of-living would be as high so far in land. At least compared to Seattle area anyways.
while I’ve never been there I was under the impression Spokane was a blue-collar industrial community.

Not as bad as Seattle or Denver, but it has gone up in the last 24 months and is projected to do so. I'm looking to do the best for myself.

Fuuuuuuck.

2 days of nearly "take a knee" kind of pain.

Time for antibiotic course round 3.

This time I got some sweet 'roids to help me. $1700 for some basic ass antibiotics is theft though.

Fuckers.

2 beers in aspen took me to orbit for 20 min.

I am sure I urinated in a millionaire's alleyway, and I felt bad until 3 guys in coats that cost more than my car were smoking weed and peeing in the same spot.

My kind of town.

And then 15 min later I was stone sober from walking. Crazy stuff.

To the moon Alice!!!

I’m still walking off the weeklong bender. haha

Thanks again for everything Matt. I needed to cut loose my man :D

If I didn't love where I lived, I could live in Washington.

From Tacoma North is one of my top three places on this earth I would live. Right after Kawaii of course.

I’m sure you can guess the third. ;)

Nice thing about Spokane is whats directly to the East.  Idaho and mountains!

Now last time I was there I saw the police rolling through town in an MRAP.  You've got to wonder about some of the crime then...

I would take the other side of that mountain range and live in Bozeman or Missoula.
