Butter, salt and pepper. Cook at 350, whole, spatchcock or cut into pieces. Use Thermometer and pull at 160-165. Will be awesome

So rant time. I get super frustrated with people always raving about my cooking, asking how I do it and completely ignoring it. Put salt pepper and butter on turkey. Put it on a rack in the oven with something under it and a thermometer in the breast. Wait till it reads 160*. Not any harder than what anyone else does, but instead people don't the exact same way they always have and then use the thermometer to find it's 200* and wonder why mine tastes better...

At the risk of being kicked off this forum. I will do mine higher. The in laws prefer their steak medium and it's taken me time to get them to that. And, for me, with the prime steak I like the texture of the meat and fat more when it's in the medium rare range. We'll see how it goes. We are meeting my SIL's BF's Fam downtown for some drinks, but the time keeps getting pushed further and further back, making time for low and slow longer and longer. Some low and slow plus 500+ sounds to be the ticket though.

I have a 5lb USDA Prime bone in rib roast to cook tomorrow evening. I'm trying to figure out the best way. Pre-Sear or post sear? 200° smoke in egg? Post sear would be easiest to do with Egg only. Pre-sear would be done in cast iron on the stove.

I need to challenge myself differently this year. I shoot the 50mm, I shoot a lot of narrow DOF close ups of my daughter, which I have so much fun doing. I shoot 1.4-2.0 a lot because I love to shoot low light, no flash. I love the warmth of the photo. I could add flash to the repertoire. I have a Canon EX4xx at my disposal. I really want to add another focal length, but I bet the wife will be stuck on zoooooom. Maybe Sean's comment on shooting on either end will help. Just spitballing, time to go read my daughter some books about becoming an engineer

This is over the last year. I am trying to go through and cleanse out some times where I took 1000 photos that are essentially the same, but didn't delete all but the best. I've gotten a lot better at it over the last few months. This is a bit skewed because I shoot almost exclusively in Av and tend to only bump up if the DOF is too narrow.
