As for the dough, when I worked in a pizza shop outside of Buffalo, we would make the dough and wrap it TIGHT as hell and put it on racks in the walk in freezer as soon as a tray was full. Then about 3 days before it was needed, it was put into the walk in fridge and it would sit for a minimum of a day and then a final day on the counter rising before it was put into small pans with olive oil on the bottom and set in the pizza making under counter cooler. J

Had I known about PR a few weeks ago I could have gotten with some people I know who do wrestling down there twice a month. They could make some great reccomendations. As for vehicles, I too am debating going away from the pick up again. I want an SUV again. Room to rest before a show and stretch my legs (cargo area with the seats dropped) is becoming important again. J

I dig the new layout. Newer skins (especially the dark) will be nice once they show up. J

WXW went pretty well last night. I still have a ton of 'ring rust' to work off. Getting down to count pinfalls was a little delayed, and my positioning in the ring was a bit stiff. I just gotta loosen up and be more fluid. Hopefully this weekend in Miami I can make adjustments. J

Simple answer, weld the back doors shut on the Mountaineer. BAM!!! You now have a two door. Anything else besides a new vehicle is a waste of cash. If you still want to do it, pay for a round trip ticket for me, hand me half the cash you'd spend doing the swap. I'll boot you in the balls twice with my steel toes, and walk back in to get on my return flight. You get the same end result, get to keep half your cash, and you waste less time. Sounds like a win/win now eh? J

We want pictures if you do. That's pretty cool, bud. Wait, what? WWE referee J?Sorry guys. Perhaps I did not explain very clearly. My apologies. From 15-20 I traveled the road with my older brother (and from 18-20 with his wife as well) doing independent wrestling (the 'indies') doing whatever was asked of me. Selling concessions, tickets, security, music, video camera, ring announcer, carrying bags, setting up and tearing down rings, etc. What is called 'paying my dues' and also learning how to be a wrestler in the mentallity at least. I also learned how to be a good ref. When I left for Active Duty, wrestling took a back seat as I had no way to do much with it. When i got out a few years ago and moved to FL wrestling and getting back the relationship my brother and I never really got as kids was the reason. Since then I have reffed all over centeral FL. As my brothers wrestling career has been winding down due to injuries, so has my appearances as a ref, since we were always a 'package deal' when it came to being booked. Well he came back to WXW to help run things backstage. The owner of WXW is 'Afa The Wild Samoan' (half of 'The Headshrinkers' with his brother Sika). Afa has sent numerous people to the WWF/WWE such as Batista, The Rock (his nephew), and The Usos (another tag team) and he is also part of 'The Samoan Dynasty' (a huge family of professional wrestlers). Well my brother had told Afa ages ago that I would like to ref for WXW and since until recently he hadn't been needing more, I had just been photographing the shows for the last few months. This past week Afa asked my brother to have me ref for them. This gets me an opportunity to be seen by the WWE, TNA and many other feds. Will this lead to even a ohone call for a tryout? Possibly. Am I counting on it? Nope. But this is a chance to work for a man who has forgotten kore about wrestling than I could ever hope to know. Honestly, I feel priveleged for the opportunity as this is not an 'easy' job as a ref can make a bad match look amazing and vice versa. Even if I somehow get a tryout with WWE physically I most likely would fail their physical. But tomorrow I make my debut at WXW. If you guys want to see some of the guys I work with 'WXW Rage TV' is the YouTube name, and 'Marc Mandrake' is my older brother. I warn you, my brother is not always family friendly in his language (much like me) and he was one of the best hardcore wrestlers (tables, thumbtacks, light tubes, etc) you'll ever see. If you guys have questions about wrestling, ask away. I won't guve away everything, but I will answer as much as I can. J

Well back to reffing wrestling again starting next weekend. When a WWE Hall of Famer asks a family member if you want to start reffing for him, it's hard to say no. At a minimum it gives me a chance to have my abilities as a ref seen by the WWE, TNA, and other top wrestling organizations. Considering my knee is not getting worse, or any better, it's worth a shot. J

While I am doing pretty decently in school (3.75 gpa), I'm finding myself missing work. Finding anything that isn't an hr away, has a flexible schedule, and pays at least semi decently is rare. Found something workin with the Student Veterans Associate at my last campus. Pay is low, but it's flexible and will cover a bit of what I need to get handled. Now just to figure out everything with the kiddo and her mom. J If I had a good idea, I'd do it. I'm ready for the next step in my life.Consulting firm? J

Nothing like the first week back to school. Especially on a campus that focus' more on the arts than the previous ones. Granted the few days before had me kinda mind fucked as the kiddo's mom has been losing feeling and having iverall numbness on her whole right side. While we have not really gotten along all that well until the last year or so, I hope for her sake as well as the kiddo, that it is nothing serious. That being said she asked if things got real bad if I would take her. Kinda mind fucked me as I was shocked it was even a question. If I could I would have her finish the semester in NY, bring her down here and after I finish my semester I would be back to work full time. J
