  1. 12 cups of turkey stock, individually portioned, vacuum packed, labeled, and in the chest freezer
  2. How is that even possible? The engine costs 75% of the vehicle. That pretty much means the rest of the vehicle is worthless. MB seems to enjoy having sky high profit margins also, all AMG's receive hand built engines

  4. Heavy wok is bad. About the only hot cooking pan I'd ever say that about. Most important for wok'ing is a burner, not the pan. A $14 pan is fine, and even a $50 burner, although it will have > 100k btu's. Mind you these woks were 4', 6', even 8' in diameter, so yeah, they're going to be heavy I have a couple 18" one's, but goddamn. My thoughts exactly

  12. The typical digital thermometer are fairly inaccurate and need to be calibrated every so often, I love/prefer thermocouples. Thermocouples are nice. Do they make controllers that have a meat probe, grill temp probe, and air temp probe so it can run it through an algorithm, give estimated cook time, and notify you when it has reached your desired temp? Hey now guys oh.. Thats what i meant by Digital Thermometers... i didn't know they were called thermocouples Most digital thermometers are not thermocouples but a cheap resistor that is LESS accurate than most analog ones. Yeah, thermistors can't hold a candle to a thermocouple *gropes new Thermapen*
  13. One thing I did notice is that the BGE temp gauge only goes up to 750; what would that translate to grill surface temp? About 1,000 or so?

While I love the length the barrel smokers offer (great for packer briskets), a BGE XL is definitely in my future; especially with a good controller and a few accessories I'm too lazy to look so Sean, which controller did you get again? Stoker? Guru? Also, do they make one that can get up to 500F? (not a requirement, just curious)

  16. Back from teh 806 Managed to prod, grope, and generally molest both of Green Mountain Grills' models, most (if not all) of Traeger's, and all four BGE's while I was up there. Talked the proprietor's ear off too, nice fella. Didn't buy a grill but I did throw some business his way by buying a Thermopen had some badass looking wok's there too; basically 1/8th inch plate power hammered into shape, heavy as shit too
