Am I scared of germs? No, but will I take reasonable precautions, good practices, etc? Yep, I sure will. Then don't cut chix on wood even if I keep my wood boards in good condition and oiled and then wash after? I have always used wood for everything. I only started using plastic for the wife. Can you cut any meat on wood?

Agreed. That siad I only like wood. I don't beleive in germs. we have some plastic ones but I never use them. You can find awesome cutting boards on ebay on the extra cheep.

Er'....its a gift for me, so I am trying not to be to picky. My logic is get the craptastic block set I have now replaced for everyday use. Then I will invest in my own 10+" Chefs knife for when I am in the kitchen. This will keep the kids off my knifes. understood. My wife and roomate don't use my knives unless I hand it to them actually.

As for the southpaw... you can get the edge and handle to be left hand ready. Everything is custom when you get hand forged/made items.

Skip the block set, it's an amazing waste. I understand the appeal, but it's just a huge waste. You only need a chef knife(or santoku if you would rather). A paring is another GREAT adition. everything else is seriously over rated. If I could do it all over again I would get a larger than 10" really nice cheff knife and spend way less on a deba for working around bones and hard material. Probably just have a german hefty paring knife for odjobs.

Your cutting board is WAY too small. Remind me when I am home to take a picture of my knife collection LOL I have a cutting board that's just about the exact size of my cook top.
