Just put a multimeter on the terminals, positive to positive and negative to negative. There should be a little marking on your meter with the Greek letter omega, that'll be the resistance setting, then adjust the scale accordingly if you don't have an autoranging meter.

DCR refers to the DC resistance of a speaker's voice coil... Do you mean output impedance?

Get rid of the crossovers, you need six channels of amplification, doesn't really matter how you get there. As long as the Kicker gear has good noise figures and the crossover adjustability you want, I don't see a reason not to use it.
