  5. It is mild Australian and I prefer something local with some aged fat, but my wife isn't quite as keen on that.

The only ones that don't have it here are the hippy stores who are afraid their customers are offended not only by veal but lamb. Otherwise everywhere else. It's real cheap and good quality at Costco btw.

  8. I was thinking thin sliced meat with a cucumber sauce and pita bread with rice.Normally sliced or ground raw and seasoned profusely. Seasoning it appropriately if it is already cooked will require a sauce. Meat drippings are your friend as a base.

  13. marjoram, dill, garlic, oregano, rosemary, thyme, high protein yogurt, tomatoes, cucumbers, onions are all also critical besides the meat for what you describe. At least if you want it to be akin to ketchup and mustard. Makes me yet again wonder wtf is wrong with americans. All this tasty shit and we put ketchup and mustard on shit? Boo. Actually I don't mind mustard, there are some lovely ones but ketchup is pretty fucking useless. We do go through probably 20 ounces of it a year as a family though.
  14. Never ever seen a "wrap" in Greece. The other problem is you are describing the equivalent to our "hamburger" to them which starts from very seasoned ground meat. As for which animal, well that you can alter but don't forget to include fat (read no chicken...)
