  10. Not sharpening, honing It removes no metal. Ceramic knives do have a purpose, just not on a chef's knife. True, it trues the edge. Just more people refer to it as a sharpening steel/ceramic so I just call it that and I don't get funny looks. *Except from you*

  12. Just bought the 10" Chefs knife from Henckles, ceramic, and some magnets to make a magnetic knife bar.

M2 has more recent experience searching, but MAC, Messermeister, Masahiro, Shun, F Dick, Tamahagane should all be available on Amazon. Problem with many recommendations is fit is important. I would shy away from the global, not because they aren't good blades but not unlike myself I think your hands are too big. Great still for slicing, but not standard chopping. I love all of mine except my chef's knife although I still use it a ton. My problem is that I don't know of a good place to buy knives within ~150 miles. The local places have Wusthof and Henckles, of which I learned I do not like the Wusthof handles. Thanks for the guidance Sean.

  21. Just one warning. 15x15 is pretty small...bamboo is also hard on blades. I regularly use it myself, just fyi. Its bigger than what I had, and picked up a Henckels 8" chefs knife.
  22. I now have a kitchen aid mixer and a 15x15x1.5" bamboo cutting board. Now to go find a real knife.
  23. Second most important thing to actually having a gun is to know what you are doing with it. Go take some classes, a intro class, talk with intelligent people, and take some actual training classes.
