How new is your Canon powershot, there is a big difference in an older 200$ P&S vs a new 400-500$ P&S. That being said a used body with a good 50mm lens would be a great starting point.

I would not use stainless just to avoid the galling issues associated with it. You'd hate to have to cut it off first time you need to change something. I'm also a little curious why so many washers/lock washers, if you need something to hold a lock washer is generally useless, use a deformed thread or nylock lock nut.
