As long as there is no salt in your marinade or at least minimal you are fine, otherwise it could pull moisture from the bird. I salt usually around 5 minutes before cooking. Long enough to pull some juices to the surface to help the browning but not long enough to dry it out. I usually marinate chicken around 2 hours which is plenty but depending on what you used longer could be better. In particular if it is buttermilk based or really acidic like an orange juice base. Normally when I do either of those though I soak overnight. The OJ would get salt as you would be building a brine. (I do realize this contradicts what I said earlier, but I did point out that it depends on what you marinate it in. Yarrr, be makin' a marinade from the briney deep... :captian: lol WTF was that. But thanks for the ideas, for chicken I try to allow for most of the day to marinate due to the density of the meat.
