for instance.. im looking at the 1500d, and one bl sub... so i was trying to figure out if i needed a dual 1 or dual 2 sub....

The Dual 2 for that, so you can run it at a 1ohm load.

are they a true dual 1 and dual 2 ohm or are they .75 and 1.5?

.75 and 1.5 is the DC resistance, not the impedance.

They are dual 1 and dual 2.
