You know what I can't get enough of? Buffalo... if done right, it is absolutely fantastic. Although, it is easy to overcook since it is so lean. I need to convince my parents to start raising buffalo instead of beef so I can get all the buffalo meat I want free, like I do with beef.

After having range beef my whole life, eating that crap in the stores is hard.... but I have rarely ever had to buy any :)

gah foie and buffalo i eat way to much of. it can get old after awhile, luckily that isn't here yet lol

Not particularly looking forward to the interview I have tonight, but I'm heading back to NC for the weekend after it anyway.

Long highway trips are good for de-stressing anyway.

Remember an interview is an opportunity for you to figure out if you want the job, not the other way around. It will not only take the stress of it down a notch but enable you to show the right interest in the position and come off better.

* note I am not saying to act cocky

Werd, my current job was the 5th interview I had in 2 days, 4 of which I received offers. By the time I got done, I could have sold my dead grandfather something.

I prefer Goose, but really enjoy the duck as well.

Gras just means edible btw. Foie means liver. It applies equally to duck & goose, but the French have this really pc way of feeding the geese that makes their livers swell up to be huge, fatty, and delicious. Gotta love raw organs!!

I am interested in a menu, I can't say that I have ever seen a Native American menu and I try everything that I can. Especially if they use a bit of French flair which usually doesn't suck unless you are trying to lose weight.

true, but we use local indgredients as much as possible. to native arizona american lol
