They make ones with "grill" marks you can use for panini if you prefer that style. Just throw it over the fire on a burner and get it hot and toast both sides at once

Do you cover top and bottom then to stop spatter. I had over roasted bacon for the first time this weekend. It was pretty nice. We put it on a wire rack over tinfoil in a cookie sheet. It was good, but spattered a bit inside the oven.

Deeper pan. Make sure there is no water or as little as possible on the bacon. Plus doesn't your oven self clean?
