First step in making ANY poultry is to get a good meat thermometer. If your bird crosses the 161 mark it will be dry.

The three birds I have done the breasts have gone up to ~164 without effecting juiciness; those were brined, though, dunno if that helps the cause or not

Brining all poultry is a good idea. Hell brining any beast you roast slow is a good idea.
