My fucking eyelashes hurt. 

Good lord. After that crazy drive back through a blizzard, I had to blow to driveway. Well, it blew back. I went ass over tea kettle and landed on my left hip. The bad one. And somehow twisted my wrist. I guess we had ice under the snow.

Boy that stung on Monday and made my knee act up today. My labia are extra sensitive today. 

 

 

Got an 80% hydration sourdough working. It is not forming gluten like I want. I think I should have done more salt. I shot for 2% but maybe I fucked up. 

I just keep adding flour and salt. I've never seen anything like this. I've added >20% more flour. There is no way this is above 70%  but it's just sopping wet and sticky

I have no markers for it and while it's hard to believe,  I eat so healthy and have had healthy gut flora until the diverticulitis and now SIBO like infection. 

I also have been eating home made bread and making my own bread for >90% of the bread I eat. If the bread is fermented enough it should have a net effect of lowering inflammation and starving the overgrowth in my gut.

Bread is vegan yogurt. If you never develop an allergy and dont have the genetic markers your good. 

Home made bread inside my large batch bread pudding saved my life. Saved >10 poundsof muscle when I was almost starving I bet.

I used stone ground instead of finely ground whole wheat. I didnt notice when adding!

 

Holy fuck. My house smells like sweetened bourbon. I am saving a loaf just to bake when the W gets home. 

 

Dense AF, but I still got crumb because ~85% hydration. Had to pour the dough into the banaton basically. no amount of slap and fold could help. Hahahaha. I basically made oatmeal loaf without the help of gelling the starches first.  God bless overnight fermentation and long autolyse. 

 

And now I k ow that even when you do everything wrong and with the most offensive ratios you can still get good bread. 

 

I can now retire.
