Time alignment tutorial
Awesomely cool technical read Alton. Always neat to see measurements along with an explanation, such as the graghs showing the reflections along side the signal. Also the graphs showing where an x-over point ends up once one source is boosted from another. Makes sense of why what would seem like a separated x-over point and slope can blend better than what one would think. lol

Kenwood bass ext setting
From what you are describing it sounds like you are lacking on the top end of the sub frequency range. What x-over setting are you using? Does that amp have a SSF...If so whats it set to? How does the bass on country and rock sound with either the bass boost or 63hz eq band raised up, without the bass ext on? Have you tried the sub phased both ways?

Recommendations on coaxial
I would recommend a fairly high efficiency speaker to showcase your HU power. Atleast 90db.... one rated at 93db or so would be even better. Whats your budget? Perhaps try a smiley face EQ setting, centered somewhere between 500-2000 hz. (whichever works, but try to find the most offensive frequency first and center on it) Report back!

Which co-ax speakers are you currently running, that you think are lacking? (your post was vague lol) Sadly you are most likely clipping due to that one kind of music being very boosted during recording. Its not the speakers fault, its the signal. A little more power and smooth out the peaks in the frequency response, and they should sound way better. Any high efficiency driver that will get loud on HU power, is going to be lacking in warmth. Smooth or loud. You pick. With what you are limiting yourself to, thats pretty much your options.

Kenwood bass ext setting
The bass extension is a feature that automatically brings the frequency's below 63hz up to the 63hz EQ gain setting level. It "extends" the EQ band. Is basically a single eq band for the subwoofers bandwidth. As far as if you should have it on or off is personal preference. Will depend on your listening tastes, equipment, install, etc. How does it sound TO YOU with it on? Did you adjust the "62.5hz" EQ band with the setting on? I personally would make sure everything else other than the sub is dialed to my personal preference first. Then bring in sub and adjust accordingly to blend. (SQ approach) If your just after bone crushing bass, then I would focus solely on the subs output while tuning. The "bass boost" most likely is centered around 40hz, the EQ band is 63hz. So perhaps try all possible setting combos with the boost, eq, and ext feature and report back if needed.

Haven't had the chance to hook them up, but the manual says volume can not be controlled once hooked to a HU, so assume it has volume control otherwise.
