These are 8s only right now.

I have a 12" model that will be next, followed by a 10" model in the "E" line.

A very tiny amount, you can pretty well ignore it for calculations... if you want to figure it in it's less than 0.1 ft^3

As a subwoofer you generally do not want anything over 80 Hz coming from them, so no, there is no reason to cross them above 200 Hz when used as subwoofers.

Should sound pretty good - won't need much power IB either.

In a sealed enclosure, would a kicker 750.1 be too much for two of these subs as a daily driver? The amp is rated at 750x1 @ 2 ohms....

Not really - it depends on the size of the box as the only real limit you'll hit is mechanical. If you hear a funny sound back down the gain a bit :)
