I really want a smoker and a grill.

I'm torn though. Water smoker sounds the way to go but the time will be about 2-3 times as long as normal smoking from what I understand, which isn't that big of a deal, but still matters.

I'm up in MN too and I liek to grill in the winter, and I want a more heavy duty unit.

I did want to keep it at around 1200 or under. I originaly looked at 1000... but soon learned I get nothing for that cost.

smoking takes 400% longer

so, if I usually do an little market cut brisket, say 3 or 4 pounds, its gonna take 16 hours??

as long as the meat is properly prepared and you cook it properly it should have plenty of moisture
