Hey guys. i'm looking at Alfredo recipes and they seem to be all over the place on the amount of butter, cream, and cheese that you use. I am making Alfredo for about 20 people. do you guys have any recipes you like to use?

Also, I won't be making it, so I would like for it to be as simple as possible.

For the record: I will be making half with shrimp and half with chicken. How much lb of chicken/ shrimp do you recommended for 20?

My answers will be expensive...

I like to substitute cheese for butter and wimp out on the cream, but for 20 that will put you at around $70 in cheese alone.

I'd recommend 16-20 ct shrimp and personally would expect 8-10 in the dish or 1/2lb. Chicken 1/3lb should be adequate.

It will also depend on what else you serve with it.

Perhaps better for me to translate the recipes you are looking at. Whose are they? Links are best of course :)

I looked at a lot of random links. Definitely looked for the cheaper options as I just want something that isn't from a jar. This will be a part of a progressive dinner where appetizers will be served at one house, entree at another then desert at another so this will probably be served with some garlic bread. It will be all girls being fed so the portions can be much smaller.

How much pasta should I have? would 3 to 4 pounds work?

Even though desert is at my house I am planning out the appetizer and entree as well.

For reference the the appetizer will be bacon wrapped dove breast and deer tenderloin (and possibly one other meat because I don't think I have enough) with a sliver of onion and jalapeño or green bell pepper and a dab of cream cheese.

The desert with be fruit, marshmallows, etc... dipped into a chocolate fountain

I would highly recommend NOT following recipes from Allrecipes or Foodtv without knowing how to read them.

This one should be okay and is rather easy. Most cooks will tell you NOT to use heavy pasteurized cream. Normally for stuff like this I actually buy the natural cream from the coop, but that is because in general I buy everything at the coop that doesn't come in a box. Exceptions being meat which I normally try to buy closer to the source.

$50+ in cheese (1 cup = 8oz) and NO do not skimp and use parmesan. Parmigiano-Reggiano is critical

I multiplied by 5 as it says 4 servings. You coudl probably multiply by 4 and get away with it. I did also assume you could find PR cheese reasonably because if not that could double. In my case I remove the other products basically and double the cheese so my previous estimate could be closer to $150 doing it that way and it will be grainier without the extra dairy.

And yes, send me some venison :)

Getting pulled over and ticketed by law enforcement makes for a bad day, and we're quite certain the feeling is amplified when the citation comes in the mail days after the infraction occurs. There's no surprise, then, that most drivers can't stand traffic cams, and in many cases, the ticketed fight the infractions tooth and nail. In the city of Baltimore, MD, there are 2,000 ticketed motorists who may have a solid case.

WBAL-TV 11 reports that a police officer who tragically died in a car accident 'signed' those 2,000 tickets months after he passed away. That's a big problem, because each red light camera citation is supposed to be reviewed by an officer of the law before getting sent out. City officials claim that the residents received the wrong notice, and that the tickets were in fact properly reviewed before being issued. We're guessing that those ticketed won't buy that explanation and the courts in Baltimore will be quite busy for the next few months.

Bought a vehicle with a Clear title, drove it for 2years. Sold it with a Clear title. Guy who bought it tries to use a 3rd party to register title instead of DMV. 3rd party states the title is "salvage" according to carfax.

The guy contacts DMV about it, they check their records and say it's clear. He keeps pushing them for more info, so they do a national scan and "check film" and say the vehicle became a salvage title 10 years ago and then somehow became clear again.

So now, instead of getting a clear title and walking away, the dmv has to deem it salvage. So now he doesn't want it anymore, wants to return it to me for full refund.

So now I'll have a salvage title and have to resell it for half the price because the DMV fucked something up 10 years ago... If I would have known it was salvage, I never would have bought the shit to begin with.

Why is there a lack of Garlic in these recipes? Is it because you use garlic with the meats? I was also thinking about throwing in some mushrooms but heck, the budget is stretched as is.

Classically Alfredo doesn't have garlic, if you want it can be added but I would make a slurry and SLOWLY (ie LOW heat) roast it in the butter first to blend/soften the flavor.

Doesn't seem so, DMV doesn't acknowledge any wrong doing on their part.
