For clarity I'm using an 8" not a 10".

My wusthofs were 6" and when I tried the 10" it was too much change so I settles for an 8 that was on sale. My technique has flourished, and I find my self looking for a bit more length.

I feel retarded with an 8 now. Slows me WAY down. 10 is A LOT to get used to. For dicing onions it is almost scary as you are using the tip of it and generally have that little fleshy spot between your thumb and pointer finger VERY exposed. If it is crosscutting an onion it may be time to sharpen.

Really funny you mention sharpening. I had just done that but felt it wasn't cutting so well. I had forgot to hon it.

It's within a few degrees off of razor sharp. Lol

What are you trying to cut? I use a 10" French style chef's knife

Trying and having trouble? Thick onions give me grief and with a longer knife I could slice flesh easier.
I use the 10" for slicing garlic, strawberries, hand peeling olives etc. I don't really need smaller knives. If I do a lot of something I may grab a specialized blade, but it normally takes me longer to grab than the extra time with the big knife.

What sort of cuts are problematic in the onion? Knife pull through too hard or??

On a larger onion I'm nearly on the heal of the blade. Vidalias or similar are a nightmare unless I make them smaller before mincing. Halves are too big.

The chicken thighs are a great example. There is just enough length to make a slice, if I have the blade a mm short I end up with not enough length to slice through.

Have you hit them with a stone recently? I realize that is no longer cutting when you push, but I use about 1" of a blade to slice and onion and I am all the way through.

The flat is not long enough so I end up tip down and using a hybrid mince cut when making onions really really fine.

Onions & Tomatoes always tell me when I need a hone.

Truth.

It's sharp enough the weight of the knife cuts through tomatoes. Just not enough length to make it through a fat 'mater or onion.

I'm sure my technique could use some work too but I think that the 6 gave me bad habits, the 8 helped me develop better habits that the 10 might allow me to use.

Maybe my technique just needs work. Going from the 6" to the 8" felt like going from a pickup to a Porsche.

My guess is that I grew up using a 10" knife as I'm fairly certain that is what my aunt who taught me to cook used. As a young child I remember it looking like a sword.

 

I need some help. I've got a 2002 Chevrolet Trailblazer 4x4. It's always idled a little low every once in awhile, cycling from around 550 down to 400 and shaking a little, but only every once in awhile. Now it seems to do it often and it died while idling yesterday. I need to get it fixed. Any recommendations on what is happening? It's our only car.

 

 

Clean the throttle body. It is an electric TB, so be careful. Get a toothbrush and some carb cleaner. Remove the air inlet snorkel from the TB. Turn the key on with the engine off. Have someone step on the accelerator pedal and shoot the carb cleaner down the throttle body. Scrub the inside of the bore and as much of the plate as you can with the toothbrush. DO NOT STICK YOUR FINGERS IN IT!!! After a short period of time the throttle plates will close as a failsafe. It will rip your fingers off. Keep cleaning until it looks decent.

 

It is a common issue with electronic throttles. It may run like shit for a while, but give it 10 or 15 minutes, and it will be fine.

 

I'll find the gum cutter, and do this tomorrow at work. Thanks a ton man. What's the story on the juice too? I'm runnin' low. lol

Some of the pros of having an electric stove are that they are usually cheaper to purchase, all you do is plug them into the outlet and there ready to cook, easier to clean because of there flat surfaces... But I still prefer a gas stove

All three to me are bullshit excuses to buy one. Additionally some are not flat but the coils. I meant is there anything better about them for temp control, constancy or other important things. To me a gas stove is easy as hell to clean, and worth the funds to get set up.

So I noticed that the Altima was sitting out in back of the shop and I decided to go try to reset the computer. I popped the hood to find this, wtf!? There were nuts and bolts laying all throughout the engine bay, there were several different spark plugs laying around. It's in pieces.

Rick I just noticed you are in Tucson. My step brother has his own shop there and a flatbed tow truck to boot. He is very competent and takes pride in his work. He is a rat rodder but is just as good on foreign's also as he did the timing belt in my daughters Lexus RX300 last time he was up. parts and labor. He had it done in less than 4 hrs.

He owe's me a favor as I hooked him up with my JD2 tube bender and notcher. I will call him once the sun come's up and see if he is available. 

 

And no I wouldn't give a 17 year old a Lexus but my oldest doesn't live with me, and thats what the other half insisted on. fyi

You know I prefer a gas range, but the W hated cleaning the top as it had about 12 pieces to pull apart and clean. She now has a smooth top electric and SHE is happier. Having double ovens is nice. the small top one heats up real quick.

If that doesn't work try the fuel filter. Check all vacuum line's. ETC. Always start with the easy stuff first.
