I think 1200 or 1400gram thinsulate is what they have as well. Beastly.

Don't be tempted by a 12", they are too big for you. If you want to come play with one though you can. I mostly use it if I have a shitpile of things to dice or to cut through bone. Of course my butchers knife is better for that, but isn't usually out. :P

Then there are a shit load of options. M2 has more recent experience searching, but MAC, Messermeister, Masahiro, Shun, F Dick, Tamahagane should all be available on Amazon. Problem with many recommendations is fit is important. I would shy away from the global, not because they aren't good blades but not unlike myself I think your hands are too big. Great still for slicing, but not standard chopping. I love all of mine except my chef's knife although I still use it a ton.

My problem is that I don't know of a good place to buy knives within ~150 miles. The local places have Wusthof and Henckles, of which I learned I do not like the Wusthof handles.
