More questions. I am going with chicken breasts. Do I brown it both sides or only one? If one do I flip it over so the browned part is facing down?

My iron cast has handles that will melt in the oven. Is it ok if I place the meat in a "large baking dish"(that's what my dictionary said lol) for the rest of the cook.

Matt nailed it. How melty are the handles? Sometimes wrapping in a wet towel works. Use a low temp to finish like 350f

Looks like another nice day to do some work.

Who ever thought wrapping windows took sooo long. Two days and only 12 windows done, 3 more to go! I am wrapping the doors today and going to J channel and start hanging siding.
